If you run a business that has a commercial grease trap, you need to make sure you take care of the grease trap. You need to get the grease trap pumped and cleaned on a regular basis. Failing to take care of the grease trap can have some serious consequences.
Backed-up Plumbing System
Your grease trap is designed to filter out grease, fats, and oils from your wastewater. The grease trap stops all the grease, fat, and oils that go down your drains from clogging up the rest of your plumbing system.
Grease and fats can coat the inside of your drainage pipes, blocking up your pipes. When your pipes are clogged with grease, water will not go down your pipes, and could back up in your drains and fill up your kitchen sink with wastewater.
Shut Down Kitchen
A secondary consequence of a back-up plumbing system is a closed kitchen. You can't operate a commercial kitchen when you don't have a way to get rid of wastewater, and wastewater is coming back up your pipes.
You need to have a functioning plumbing system in order to operate your kitchen according to health and building codes. Failing to clean your grease trap will lead to you having to shut down your kitchen, which will cost you a lot of money.
Damaged Sewer System
When you fail to clean your grease trap, and allow it to overflow, that overflow can get into the city sewer system. If your grease and fats from your restaurant clog up the local sewer line, your restaurant will have to pay the repair bill, which can be costly.

Not cleaning your grease trap on a regular basis can cause serious damage to the internal components of your grease trap.
When you neglect your grease trap, solid food can collect at the bottom of your grease trap in addition to the regular oils and grease that it is designed to filter out. That sludge can eat away at the bottom of your grease trap, causing it to get damaged.
It can be expensive to replace and/or repair your grease trap.
